Boris Villatte to Open Bakery in Falmouth

Here's another rumor I had heard, but it was not confirmed until this week. Boris will open a bakery called Maison Villatte in Falmouth, and I wish him well in this new endeavor. The bread at PB Boulangerie Bistro has not been as good since Boris left, almost a year ago, but I'm sure Philippe is working on fixing that and the food remains exceptional. I do not plan to drive two hours for bread. Had Boris chosen Chatham, yes. Once in a while. How about you?

Boris was wonderful, a nice guy, and a terrific baker. I notice no or little diminution in quality in the Boulangerie. William, the manager, is terrific.

Thanks for the comment, Jack. The bread does not last as long. That is the difference. That matters to me, because I run a B&B. I have noticed a difference in the pain demi, which I use to make French toast. The baguette also gets hard overnight. The baguettes Boris baked were still relatively edible the following day. I have heard others say the same thing. The croissants are still top-notch, though. I still love the food, although it has gotten pricier than the first year, so I will have to now warn guests whom I send there, but I do enjoy the experience of dining in a totally French atmosphere.

Well, it depends when they did the testing, doesn't it? Thanks for sharing this article. Fun that PB made the list, despite all the turmoil and upheaval. When I lived in France, I learned that every baker makes a different baguette. The range from one bakery to another was phenomenal. All I am saying is that the amazing baguettes Boris knows how to make have not been replicated by whomever is baking for PB at this point. They taste good, yes, when you buy them, but the following morning they are hard as rocks. Boris's baguettes could be easily made into sandwiches the following morning. I'm not a sandwich person, but Sven is. That type of thing mattered to him. It will be interesting to see whether Boris gets the same oven he had at PB for the new Falmouth bakery.
Glad I was able to enjoy the bread and pastries while Boris was at the helm. The bread was good, but I'd certainly not drive all the way down to Falmouth for it (that certainly wouldn't be very green!) - besides, I'm sure there will be plenty - perhaps more - business there than in South Wellfleet, hope he does well. French style bakeries seem to be all the rage right now with several popping up locally, lots of choice and competition which is fantastic.
